1. Marinate wings with dark soy sauce, sesame oil, white pepper and shao xin wine for 30 mins
2. Under high heat, add in slice ginder for few second then add in wings to stir for few mins to get some colors....
3. Add in mushroom & black fungus (dry mushroom & hard black fungus to soak in water to get soft) stir for few more mins.
4. Add in chicken broth enough to cover the ingredients, then add in dark soy sauce, oyster sauce and a bit of salt to taste (qty pls adjust to ur own preference), turn to medium low heat to reduce & thicken the sauce slowly
5. Before turn off heat, add some sesame oil, red chili then served with fresh chopped coriander
