Ingredients:
250 g bread flour
15 g milk powder
5 g instant yeast or 1 top
25 g sugar
1 egg
110 g water
35 g butter
1/2 tsp salt
1 tsp Dough softener
1 tsp dough improver
Method:
Beat all ingredients except butter for 5 mins.
Add in butter and continue kneading.
Rest for 1 hour
Divide into 8 portion, then roll into balls, flatten and wrap fillings and shape into ball again.
Rest for 30 mins or less
Pipe topping mixture on top on each buns in coiling motion and bake at 170 or 180°C for 20 mins.
Fillings:
Shredded cheese
Toppings:
35 g butter
50 g icing sugar
1tbsp coffee melted in 1tsp hot water
1/2 beaten egg
45 g plain flour
10 g milk powder
1/2 tsp coffee emulco
Method:
Beat sugar and butter till creamy , add in egg.add in flour, milk and the rest ingredients and mix well and fill into pipping bag.
Tips:
Do not over proof for the second proof so that your bread won't collapse.
U can replace cheese with butter mixture by combining 2 tbsp butter with 1 tbsp sugar.
Don't need to have a fancy machine to do this just make sure to give a kneading fold before letting it to rise.
The dough softener and improver is optional but if u have this your bread is a soft like those sell outside.
Do not over bake also , once you see the top is dry or looks so crispy then it's done .bun is normally be bake 15 mins or less with preheated oven.
When pipping the toppings make sure no gaps to evenly toppings..
For a small family, half the recipe.
Best eaten when it's hot.
