Ingredients:
Chicken parts (I used 5 big drumsticks)
Old ginger 1 pc (about 1/4 palm size)
2 tablespoonful of brown sugar (u may use castor sugar..I preferred brown

Rice wine 1 bottle (im left with 3/4 bottle and I poured all into the pot)
Spring onions 2 stalks (washed and chopped)
Hua tiao wine 2 tablespoons
Light soy sauce 3 tablespoons
Dark soy sauce 2 tablespoon
Sesame oil (amount used is 1/3 of the sesame oil in the big bottle)
How to cook:
Heat wok and fry the gingers till its abit crispy and dry
Add sesame oil into the wok and continue to fry it for about 15mins
Add in chicken parts and let them soak in the sesame oil with ginger slices for about 4mins
After that ..stirred fried the chicken parts for 10mins and add in the rice wine. Mix well
Add sugar, hua tiao wine, light soy sauce and dark soy sauce
Mix it well and cover lid to let it simmer for 40mins
Open lid and stir well again ..add in chopped spring onions and close fire.
Close the lid for another 10mins before you serve with rice
