Snow Pear Soup with White Fungus and Carrot by Camilla Teo

 
Ingredients:-
2 snow pears
5 maces (approx. 18.9g) white fungus / snow fungus
1 tael (approx. 37.5g) lily bulb
3 maces (approx. 11.3g) sweet almond
1 carrot
1/2 (approx. 300g) lean meat

Method:-
1. Soak white fungus until soft. Thoroughly rinse and set aside.
2. Rinse snow pears, remove stems and cores, cut into pieces and set aside.
3. Scald lean meat in boiling water for 5 minutes without cutting it into pieces. Rinse and set aside.
4. Place 3000ml of water in a pot to a boil over high heat. Add in all ingredients and simmer for 3 hours. Turn off heat, and season with salt

Clear heat, moistens lungs, calms heart and spirt ~
Snow pear clears heat and moistens lungs. Snow fungus nourishes yin and moistens lung. Lily bulb moistens lungs and clears the heart. Sweet almond moistens lungs and stops cough. Carrot promotes digestion and relieves dyspensia. This soup is suitable for children with sensitive brochus or who suffer from common cold. It can also prevent the spread of common flu.
