THREE CUP CHICKEN with Thai Basil Leaves by Alice Pang


Ingredients:
3 large chicken legs
1/2 tsp salt
1/2 tsp coarsely grounded pepper
Some cooking oil


SAUCE:
50ML Sesame oil
3tbsp cooking oil
8 whole shallots
20-30g Ginger slice
40-50g Garlic
10pcs or more depending how spicy u wanted of dried chillies soak for 10mins n cut into halves.
10ml shaoxing wine
80ml of KOREA RICE WINE
50ml Light soya sauce
200ml light chicken stock
1-2 tbsp dark soya sauce
2tsp of sugar
2bunches of Thai Basil leaves


Methods:
1. Marinate chicken with salt n pepper . Set aside
2. To prepare sauce: heat sesame oil and oil , fry the whole shallots, garlice and Ginger till fragrant. add in dried chillies and Thai basil leavrs and cook for another 2-3mins
3) pour in soya sauce , chickem stock, wine and sugar. Add in chicken to the pot and braise for 10-15 mins till chicken cook.
4) Add in Some Thai Basil leaves and Yummy Yummy with steam rice.
