Ginseng Chicken Soup (Samgyetang) by Mock HK

 
Ingredients:
1 small chicken, 8 cloves of garlic, 10 dried red dates, 1/4 cup of glutinous rice, 1 chopped green onion, and 3 small ginseng roots.

Method:
1. Wash and rinse the chicken in running water.
2. Soak 1/4 cup of glutinous rice for 1 hour.
3. Stuff the chicken with the glutinous rice, a ginseng root, 2 cloves of garlic, 4 dried red dates. Seal the opening with a skewer and put chicken into a claypot.
4. Pour water into the pot to cover the whole chicken. Add in ginseng, ½ tsp salt, ½ tsp pepper, 6 dried red dates, 6 cloves of garlic and boil it over high heat for 15 minutes.
5. Skim off any foam and fat that rises to the surface. Turn to medium heat and simmer (probably for another 40 minutes) until the chicken is tender and easily pulled apart.
6. Turn off the fire, garnish with green onions and serve. (I have added 1/3 bottle of Soju (
燒酒) to make the soup more tasty. However this step is optional)
