Laksa by Linda Lau


Serve 4
Ingredients
1) rempah
2) laksa bee hoon
3) fish cake
4) prawn
5) laksa leavex20( to be put into the pot for cooking/ another 20 leaves, cut into small pcs for garnishing )
6) tau pok
7) egg or quail egg
8) fresh coconut milk 200g
9) evaporated milk 200g
10) bean sprout

Methods
1) put 2.5 litres of water in a pot, when boil, add rempah, laksa & tau pok
2) cook for 20 mins at medium heat
3) add evaporated milk & coconut milk
4) cook for 5 mins, add pinch of salt
& done
5) blanch the bean sprout & bee hoon
6) add laksa soup & ingredients & done



'Rempah' for 4-5 serving of Laksa
Ingredients
1) dried chilli 20 ( partial deseed )
2) garlic x10
3) shallot x10
4) turmeric 2 thumb size
5) galangal 1 pc about 5-7 cm
6) balachan 25-30 gm
7) candlenuts x10
8) lemongrass 2 sticks
Pls soak or boil the dried chilli till soft

Methods
1) blend 1-8 with 50 mls of water
2) heat up a wok with oil, must put quite alot
3) add all the ingredient that was blend to fry
4) fried unti it is fragrant
5) add dried shrimp, fried for awhile... Not to long or else it will be charred... Done
