Sambal Brinjal by Margaret Goh


1. Cut brinjals into thick slices.(I use Sakura Brinjals) Bring water in a pot to a boil. Boil your brinjals for about 2 minutes. Remove brinjals from the pot.
2. In a wok, stir fry some minced garlic and sliced shallots till fragrant. Add in 3-4 tablespoons of minced dried shrimps and continue frying till fragrant.
3. Then add 2 big tablespoons of Singlong nasi lemak sambal chilli and fry till fragrant.
4. Add some water and stir till sauce is well combined.
5. Put the brinjals into the wok and let the brinjals simmer till you obtain your preferred texture.
6. Dish brinjals onto a plate and sprinkle with some spring onions.
