Stir-fried Minced Pork with Sweet Basil Leaves by May Rossi Leong

1) *I marinated the minced pork with rice wine, cornstarch, sesame oil and pepper. (*I do this for all my pork dishes, just my personal preference. I usually add in light soy sauce too, but as there is fish sauce in this recipe, I didn’t do so this time. You can skip this step if you wish.)

2) In a bowl, add oyster sauce, fish sauce, dark soy sauce & sugar.

3) Chop up some cloves of garlic and chilli padi.

4) Fry the garlic & chilli padi, till garlic turns light brown.

5) Add in the minced pork. Stir it around & try to loosen it up. Fry till it changes colour & getting cooked.

6) Add the sauce in 2), stir & mix well with the pork.

7) Add in some water, followed by basil leaves, fry with the pork till the leaves wilted. Serve.
