Teriyaki sauce & Chicken by Linda Lau

 
Ingredients
1) light soya sauce 4 tbs
2) mirin 4 tbs
3) sake 2 tbs
4) sugar 1 tbs
Mix all into a bowl & put aside

The above recipe is for 1 chicken thigh ( Pasar ) from ntuc

Methods
1) marinate chicken thigh with salt & black pepper for at least 30 mins
( do not deskin )
2) use a flat pan, no need oil, place the chicken in the pan with the skin face down, pan fried for about 3 mins till abit golden in colour( medium heat )
3)turn the chicken, pan fried for another 3 mins, (medium heat)
4)add the teriyaki sauce & sugar, allow the chicken to simmer till the sauce is dry ( low heat)
( the sauce will become caramelised )
Keep turning the chicken so that both side will absorb the sauce
By then, the chicken is cooked
