Ayam masak merah by Lena Lai


Grind to paste
1 onion
6 pips of garlic
2 lemongrass
8 - 10 dried chilies- soak in hot boiling water n deseed
1 inch of ginger n galangal n turmeric.


Sauté one pc of cinnamon n star anise till fragrant. Dish out. Add the grinded paste n add one cup of water. Sauté till oil separate.

When oil separated, put in 2 chopped tomatoes, 6 tbsp of tomatoes sauce, 2 tbsp of chili sauce, salt n sugar to taste. Now put in the air fried turmeric chicken (AF till half cook, abt 10-15 mins depending on how big cut they are. Marinated with 1 tbsp of turmeric powder n a pinch of salt.

Cook till the chicken is fully cooked.

Lastly add some mint n pandan leaves n continue cooking for another 5 mins. U can also add in onions. I like it raw, so I added it last.

If not enuf water, just add till the level u want it to be.
