Lotus Leaf Mai Gai by Sharon Foo


Lao Mai Gai recipe from Evelyn Lim:

Ingredients

3 cups glutinous rice * I use half a kg*
(Buy long type which no need to soak) * I didn't I buy normal kind *
3 pcs big deskin drumstick (slice to bite size) * I use half kg thigh meat*
2 pcs lapcheon (slice it) * I use 6 lapcheong*
5-6 big Dried mushroom * I use 20 n cut into half*
(wash n soak in warm water till expanded n soft, cut or slice to pcs, water dun discard keep for cooking g/rice)
Seasoning * if you are going to do like me using half a kg of rice pls add more seasoning into everything.
2 tbsp oyster sauce
1tbsp dark soya sauce
1tbsp light soya sauce
1tsp sugar
1tbsp ginger juice
1/2 tsp salt
1/4 tsp 5 spice powder
1,1/2tbsp huat tio jiu
1tbsp corn flour


Marinate : mixed well seasoning in a bowl n put in chicken n mushroom to marinate for 1-2 hr.

Step :
1) Heat wok with 1 tbsp oil with mild flame stir fried lapcheong till fragrance. Put aside
2) add in well marinated chicken n mushroom stir fried till chicken just cook. (Marinate sauce dun add in keep for cooking G/rice)
3) scoop out the chicken n mushroom put aside without the sauce.
4) wash 3 cups glutinous rice n use 3 cups of mushroom water with the remaining sauce taste to your taste.. put in rice cooker n cook.
5) once rice is cook. Place and arrange lap cheong, chicken n mushroom into the aluminium foil bowl or u may use small rice bowl.
6) steam it with big flame for half an hour.
7) unmould n serve with chilli sauce.
For the rice part I soak it for a few hours n I fry it with garlic plus soya sauce n dark soya sauce some five spice powder n pepper. Somehow like doing 粽子. before displaying onto the LMK n lotus rice. 
 
For lotus leave glutinous rice, I use half a kg of rice. Since already doing might as well do more. You can add in salted egg yolk, peanut,chestnut, dry scallop n oyster as yr preference.

I am more 重口味so pls add according to yr taste bud. For seasoning I added more as usual. If your taste bud is lighter,pls follow Evelyn recipe exactly.

Lotus leave you Gota soak in over night n rinse it well the next day n leave it to hang to dry before wrapping. You can buy it from Ntuc or wet market.

It's a rather long recipe but in general it's just fry the ingredients n rice then just display n steam it that's all.
