Three Cheese Raviolli by Carmela Vivas Tamani



Ingredients 
1 cup pitted green olives chopped
1 tbsp Olive Oil
1/2 tbsp lemon juice
2 tbsp chopped parsley
1 cup grated mozarella cheese
1/4 cup pecorino cheese grated
50 g soft goat cheese.
Sea salt and cracked pepper
Wanton wrapper of any kind
2 tbsp chutney
Oil for frying

Method
Place the olive oil, lemon juice and parsley in a small bowl and mix to combine. Set aside
Place the mozarella, pecorino and goat cheese, salt and pepper in a other bowl and combine
Put 1 tbsp of cheese mixture in the center of the wrapper, top with butter olive mixture then top with little chutney
Brush edges with water and cover with another wrapper. Press the sides to seal and repeat procedure to remaining mixture
Fry until golden and crispy.
