Claypot Braised Noodle in Laksa Fried Rice Sauce by Rachel Lee




Yee Mee (伊面) need not go with just soy sauce and oyster sauce. A whole new different flavour using the Prima Laksa Fried Rice Sauce has made it a very delectable one pot dish for our Sunday's lunch. Easy! Comfort food for a rainy morning!

Ingredients (enough for 2 pax) :• 150 gm Dried Yee Mee Noodles
• 1 full packet Prima Taste Laksa Fried Rice Sauce
• 8 pcs prawns (with head and shells)
• 100 gm white or brown clams (optional)
• 60 gm threafin fish meat (thinly sliced)
• 1 cup iceberg lettuce (finely chopped)
• 4 cloves garlic (peeled and thinly sliced)
• 1 medium sized onions (peeled and finely chopped)
• a handful of parsley (chopped for garnishing)
• water (for soaking noodles)
• cooking oil
(tsp = teaspoon; tbsp = tablespoon)

Method :1. Boil water in a saucepan. Turn off heat when boiled and soak dried Yee Mee Noodles into saucepan till slightly softened. Do not over soak. Drain and set aside.
2. Heat a little cooking oil in claypot and lightly stir fry all onions and garlic till aromatic. Use medium heat.
3. Fold in Prima Taste Laksa Fried Rice sauce and 200 ml water. Stir well and heat till bubbling.
4. Fold in prawns, fish slices and clams in sequence.
5. Turn to low heat, cover lid and simmer for 3 to 5 minutes till seafoods are almost fully cooked.
6. Remove lid and fold in soaked Yee Mee noodles and vegetables.
7. Ensure noodles are evenly coated with sauce. Turn off heat once noodles are cooked to your desired texture. Noodles would turn mushy if over cooked.
8. Dish out. Garnish with chopped parsley before serve.
9. Serve whilst hot.
